Cilantro Lime Dressing

After a cold and rainy spring, it looks like summer weather is here to stay! I love everything about summer minus the mosquitos, ticks and spiders... See a trend here? This year, my daughter and I had a blast planting herbs in our back yard. They have grown tremendously and we have an overabundance of all of them, especially cilantro. We have made salsa with the cilantro, but I wanted to post a delicious cilantro salad dressing recipe that you can also enjoy. It tastes just like summer in a bottle!

Cilantro Lime Dressing
1 large avocado
1/2 cup of cilantro with stems removed
1 garlic clove
1/2 cup plain Greek yogurt
3 tbsp of olive or coconut oil
1-2 fresh squeezed lime (taste to see how strong you want it)
1/4 cup of water (add slowly depending on what consistency you want)

Place all of the above ingredients in a food processor. Keep in an air tight container for a little over a week.
