Super Quick Baked Oatmeal

Baked oatmeal is absolutely delicious! In a way, its just like eating a cookie or pie for breakfast! The prep time is less then 10 minutes, and 30 minutes later you will be sitting down to a big bowl with baked oatmeal in a bowl covered in milk. This is great for breakfast and I even use it for dinners when we are experiencing a time crunch.

3 cups of rolled oats
1 cup of brown sugar (or you can use 1/2)
Ground cinnamon (as much as you like)
1 cup of milk
2 eggs
2 tsp. of vanilla extract
2 tsp. of baking powder
2 eggs
1 cup of chopped fruit your choice.
4 tbsp. of melted butter

I am a huge fan of combining apples with chocolate chips, but I also love mixed berries in the batter.

Preheat oven to 350

In a large bowl or mixer, combine all dry ingredients and add remainder ingredients together. Pour batter into a glass pan, spread evenly. Set your timer to 30 minutes. Once you remove the baked oatmeal, you can scoop it into a bowl and pour  milk over it (I prefer vanilla soy, but its still delicious with regular milk). You can also use a muffin tin, just decrease total time to 20 minutes.
